Hot Dog Fried Rice

A five-minute fridge-clean-out fried rice made like Spam fried rice, but with seared beef hot dogs, garlicky buttered rice, soy sauce and soft scrambled eggs. Finished with fresh green onions for a quick, comforting bowl.

Ingredients

  • —beef hot dogs · grass-fed preferred, cut into small pieces
  • —cooked rice · already cooked
  • —butter · a dab, plus more as needed
  • —garlic · freshly minced
  • 1 pinchsalt · plus more for the eggs
  • —black pepper · lots, plus more for the eggs
  • —soy sauce · just a little bit
  • —eggs
  • —oil · optional, if the pan needs more fat
  • —green onions · chopped

Steps

    Cut the hot dogs into small pieces and cook them in a pan until they get nice color.

    Add the cooked rice to the pan along with a dab of butter, the minced garlic, a pinch of salt and lots of black pepper. Fry everything together.

    Add a little soy sauce and toss to combine.

    Push the rice aside, adding more oil or butter to the center of the pan if needed. Crack in the eggs and season them with salt and pepper.

    Scramble the eggs with a spatula as they cook, then mix them into the rice.

    Stir in the chopped green onions and serve.

Creator's notes

Basically Spam fried rice made with hot dogs instead. She likes grass-fed beef hot dogs and makes this when the fridge is nearly empty.
