Lemon Poppy Seed Loaf (Boxed Cake Mix Shortcut)

A tender, tangy lemon poppy seed loaf that starts with a box of yellow cake mix and finishes under a bright lemon glaze. Two requests answered in one easy bake.

Ingredients

For the loaf

  • 1 boxyellow cake mix · Betty Crocker Super Moist Yellow Cake
  • 1 stickbutter · melted
  • 2/3 cupsour cream
  • 3eggs
  • 1lemon · zested
  • 2lemons · juiced
  • 2 Tbsppoppy seeds

For the lemon glaze

  • 1lemon · zested and juiced
  • 1 1/4 cupspowdered sugar

Steps

    Preheat the oven to 375°F.

    Add all the loaf ingredients to a large mixing bowl and mix well.

    Pour the batter into a loaf pan and smooth out the top with a rubber spatula.

    Bake for about 45 minutes, until a toothpick inserted in the center comes out clean and the top is golden brown.

    While the loaf bakes, make the glaze: zest and juice a lemon into a liquid measuring cup, then slowly stir in the powdered sugar until a runny glaze forms. You may need more or less powdered sugar depending on how much juice your lemon gives.

    Drizzle the glaze over the loaf while it's still warm.

    Slice and serve.
