Oatmeal Chocolate Chip Banana Bread
A moist, hearty banana bread loaded with rolled oats and melty chocolate chips. It's the best possible excuse for those bananas going brown on the counter.
Ingredients
- 4large bananas · if using frozen bananas, make sure they're fully defrosted
- 2large eggs
- 1 cupbrown sugar · packed
- 2 tspvanilla extract
- 1/2 cupbutter · melted and slightly cooled
- 1 cupall-purpose flour
- 1 cupold-fashioned rolled oats
- 1/2 cupoat flour · you can make this by blending rolled oats in a food processor or blender
- 1 1/2 tspbaking soda
- 1 1/2 tspbaking powder
- 1/4 tspsalt
- 1 cupchocolate chips

Wash your hands before you start.

Preheat the oven to 350°F.

Prepare a loaf pan by lightly coating it in cooking spray and lining it with parchment paper. Set aside.

Mash the bananas by putting them in a Ziploc bag and squeezing until they're completely mush, then add them to a large mixing bowl. Don't try to mash frozen bananas — the bread will have chunks of unincorporated banana and won't come out right.

Crack the eggs into the same bowl, then add the brown sugar, vanilla, and melted butter.

Whisk until combined and set aside.

Measure out the dry ingredients into a separate mixing bowl and stir well.

Add the wet mixture to the dry and stir just until incorporated — don't overmix.

Fold in the chocolate chips.

Pour the batter into the prepared loaf pan and bake for about 1 hour.

Test for doneness with a toothpick — it should come out clean when inserted in the center of the bread.

Let cool for about 30 minutes on a rack before slicing and topping with butter.
Creator's notes
Frozen bananas work great here — just defrost them fully before mashing. Waiting for the loaf to cool will be harder than you think.
