Peanut Butter Chocolate Chip Cookies
Soft, chewy peanut butter cookies loaded with semisweet chocolate chips and baked bakery-size for tender centers and golden, crisp edges. A retested version with extra peanut butter flavor in every bite.
Ingredients
- 2 1/4 cupsall-purpose flour · 270g
- 3/4 teaspoonbaking soda
- 1/2 teaspoonsalt
- 1 1/2 cupscreamy peanut butter · like Jif; 396g
- 1 cupunsalted butter · softened; 226g
- 3/4 cuppacked light-brown sugar · 165g
- 2/3 cupgranulated sugar · 135g
- 2 teaspoonspure vanilla extract
- 2large eggs · room temperature
- 1 1/2 cupssemisweet chocolate chips · 270g

Preheat the oven to 350°F and line two large baking sheets with parchment paper.

In a small mixing bowl, whisk together the flour, baking soda, and salt.

In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, unsalted butter, brown sugar, and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes.

Add the eggs one at a time, then the vanilla. Stop and scrape down the bowl, then beat again until well mixed, about 1 minute.

With the mixer on low speed, gradually add the flour mixture and beat just until combined. Stir in the chocolate chips.

Drop 3 tablespoon-size balls of dough (about 50g each) onto the lined baking sheets, spacing them about 2 inches apart.

Bake one sheet at a time for 12 to 14 minutes, until the cookies are golden around the edges but still soft in the center. A longer bake time gives a crisper cookie.

Let the cookies cool on the baking sheet for 1 to 2 minutes, until they firm up a bit, then transfer to a wire rack to cool completely.

Store in an airtight container for up to 3 days, or freeze for several months.
