Pumpkin Biscoff Ice Cream Sandwiches
Creamy no-churn pumpkin spice ice cream with a ribbon of Biscoff spread, layered between two buttery Biscoff cookie crusts. Slice into bars for a cozy fall freezer dessert.
Ingredients
- 2 sleevesBiscoff cookies · 8.8 ounces or 250 grams each, divided
- 12 tablespoonsunsalted butter · melted, divided
- 2 cupsheavy cream
- 1 1/2 teaspoonsvanilla extract
- 1 cansweetened condensed milk · 14 ounces
- 1 cuppumpkin puree
- 2 teaspoonspumpkin pie spice
- 1/4 cupBiscoff spread · warmed
- 1/4 cupBiscoff cookie crumbs
Steps

Line the bottom of a 9x9-inch pan with parchment paper.

In a food processor, pulse half of the Biscoff cookies (1 sleeve) until finely ground into crumbs.

Transfer the crumbs to a bowl, add half of the melted butter, and stir until the mixture looks like wet sand. Press it firmly into an even layer in the bottom of the prepared pan, using the bottom of a measuring cup to pack it down, then freeze while you make the ice cream.

Pulse the remaining Biscoff cookies in the food processor until finely ground, then transfer to a ziplock bag and set aside at room temperature for the top crust the next day.

In a large mixing bowl, whip the heavy cream and vanilla extract with a hand mixer on medium speed until stiff peaks form.

Add the sweetened condensed milk and whisk on low speed until fully incorporated.

Add the pumpkin puree and pumpkin pie spice and whisk on low speed until smooth and fully combined.

Remove the pan from the freezer, pour half of the pumpkin ice cream mixture over the crust, and spread into an even layer with a rubber spatula.

Drizzle the warmed Biscoff spread over the ice cream layer, then sprinkle the 1/4 cup Biscoff cookie crumbs evenly over the top.

Pour the remaining pumpkin ice cream mixture over the Biscoff layer and spread into an even layer.

Press a piece of plastic wrap directly onto the surface of the ice cream to cover it completely, then freeze overnight.

The next day, stir the reserved Biscoff crumbs with the remaining melted butter until the mixture looks like wet sand.

Remove the plastic wrap, pour the crumb mixture over the ice cream, and quickly spread it into an even layer, working fast since it firms up quickly.

Lift the dessert out of the pan using the parchment paper. Cut it down the middle with a sharp knife, cleaning the knife between cuts, then cut each half into 4 to 5 rectangles for 8 to 10 pieces total.
