Sesame Cabbage Salad
Crisp shredded cabbage and cucumber ribbons tossed in a creamy toasted sesame-tahini dressing. It comes together in about five minutes with no cooking at all.
Ingredients
For the salad
- —cabbage · thinly sliced
- —cucumber · cut into ribbons
- —parsley · optional
- —toasted sesame seeds · for finishing
For the dressing
- 2 tablespoonstoasted sesame oil · plus a little more for finishing
- —tahini
- —maple syrup
- —garlic · fresh
- —shallot · very finely diced
- —vinegar
Steps

Thinly slice the cabbage and add it to a large bowl.

Peel the cucumber into ribbons and add to the bowl, along with the parsley if using.

Make the dressing: whisk together the toasted sesame oil, tahini, maple syrup, fresh garlic, finely diced shallot, and vinegar until creamy.

Pour the dressing over the salad and squeeze everything together with your hands to tenderize the cabbage and coat it evenly.

Finish with a little more toasted sesame oil and a sprinkle of toasted sesame seeds.
