Slow Cooker Meatball Stew
Frozen meatballs, gold potatoes and baby carrots simmer all day in a garlicky beef-stew broth. Hearty, hands-off comfort food that never heats up the kitchen.
Ingredients
- 1yellow onion · chopped
- 4gold potatoes · roughly chopped
- 2-2 1/2 lbmeatballs · fresh or frozen; creator used Meijer's frozen restaurant style meatballs
- —baby carrots · a few handfuls
- 3 Tbspjarred garlic · or 4-6 cloves fresh garlic
- 1 packetbeef stew seasoning mix · or 2 Tbsp of your own mix
- 3 cupslow sodium chicken broth
Steps

Add the onion, potatoes, meatballs, baby carrots, garlic, beef stew seasoning and chicken broth to a slow cooker. Stir to break up any clumps of seasoning, but don't overdo it.

Put the lid on and cook on low for 4-6 hours, until the potatoes and carrots are tender — a fork should meet little resistance.

Serve hot.
