Strawberry Crunch Ice Cream Sandwiches
Sugar cookies sandwiched around thick scoops of vanilla ice cream, then rolled in a crushed Golden Oreo and freeze-dried strawberry coating. It's the nostalgic strawberry crunch bar, but bigger and better.
Ingredients
- 1 cupfreeze-dried strawberries
- 6Golden Oreos
- 12sugar cookies · pre-made from the grocery store is completely acceptable
- 6 cupsvanilla ice cream · individual sundae cups work well for this
Steps

Dump the freeze-dried strawberries and Golden Oreos into a Ziploc bag. Seal it and pound it with a rolling pin until the mixture forms a fine, crunchy dust.

Open the bag and pour the strawberry crunch mixture onto a plate.

Arrange six cookies on a baking sheet and scoop about a cup of ice cream onto each one.

Press the remaining six cookies on top of the ice cream to form sandwiches, letting a little ice cream bulge out of the sides.

Roll the ice cream edge of each sandwich in the strawberry crunch mixture to coat.

Freeze the baking sheet for 10-15 minutes, until the ice cream has firmed up and each sandwich is fully chilled.
