Street Corn-Inspired Chicken Salad
Charred corn and green chiles pile onto crisp romaine with taco-seasoned chicken, beans and salty Cotija, all finished with a tangy lime-sour cream drizzle. It's the fresh-adjacent lunch that eats like street corn in salad form.
Ingredients
For the chicken
- 1 lbboneless/skinless chicken breasts · butterflied
- 1 Tbspavocado oil
- 2 Tbsplime juice
- 3 Tbsptaco seasoning
For the corn
- 1 10-oz bagfrozen corn
- 1 4-oz candiced green chiles
- 1 Tbspcowboy spice mix · or Kinder's Cowboy Butter
For the dressing
- ¼ cupsour cream
- 2 Tbsplime juice
- 1 tspcowboy spice mix · or Kinder's Cowboy Butter
For the salad
- 1 headromaine lettuce · washed, dried and chopped
- 1 15.5-oz canbeans · drained and rinsed; any kind works, Southwestern-style seasoned beans recommended

Toss the chicken breasts with the avocado oil, lime juice and taco seasoning in a shallow dish until well coated on both sides. Wash your hands after handling raw chicken.

Place the chicken in a single layer in the air fryer, working in batches if needed. Air fry each batch at 400°F for 10 minutes, flipping once halfway through, until the internal temperature reaches 165°F. Slice each breast about ½ inch thick.

Sauté the corn, green chiles and cowboy spice mix in a medium frying pan over high heat, stirring until well combined. Cook until the corn starts to char, then remove from the heat and let cool.

Whisk together the sour cream, lime juice and cowboy spice mix until well combined. Thin with more lime juice if the dressing is thicker than you like.

Assemble the salads: in a medium bowl, layer romaine, sliced chicken, the corn mixture, beans and Cotija cheese, then drizzle with dressing. Repeat for each serving.

Creator's notes
Fresh-adjacent eating for when it's too warm to cook much — the dressing can be thinned with extra lime juice to taste.
