Summer Fried Cheese
Crispy cornflake-crusted cheese served on a bed of blistered roasted tomatoes, topped with charred zucchini ribbons, grilled corn and fresh basil. A bright, easy appetizer made for late-summer produce.
Ingredients
For the Roasted Tomatoes
- 4 ozcherry tomatoes
- 1/2 headgarlic
- 2chili peppers · fresh or dried
- 1/4 cupolive oil
- —salt and pepper · to taste
For the Grilled Vegetables
- 2medium zucchini · sliced lengthwise into ribbons
- 1/4 cupolive oil
- 1/2 tsporegano
- 1 tspsalt
- 1/2 tspgarlic powder
- 1 earcorn · roasted
For the Fried Cheese
- 2eggs · beaten
- —salt and pepper
- 1 cupflour
- 1/4 tsppaprika
- 1/2 cupcornflakes · crushed
- 1/2panko breadcrumbs · unit not specified in source
- 2 blocksbread cheese · or halloumi or another semi-firm cheese
- —oil · high smoke point, for frying
- —fresh basil leaves
- —olive oil · for drizzling

Preheat the oven to 400°F.

In an oven-safe dish, add the cherry tomatoes, half head of garlic, and chili peppers. Drizzle with olive oil and season with salt and pepper.

Roast the tomatoes for 15-20 minutes, or until they are soft and starting to burst.

While the tomatoes roast, add the zucchini ribbons to a shallow dish with the olive oil, oregano, salt, and garlic powder. Mix to coat evenly.

On a grill or griddle pan over high heat, grill the zucchini slices for 2-3 minutes per side, until slightly charred. Remove from the heat.

Grill the corn until charred, remove it from the heat, then cut the kernels off the cob with a sharp knife.

Set up three shallow dishes: beaten eggs seasoned with salt and pepper; flour mixed with paprika, salt, and pepper; and crushed cornflakes mixed with panko breadcrumbs.

Working one at a time, dredge a block of cheese in the flour mixture, then the beaten egg, and lastly the cornflake crumb mixture, making sure all sides are well coated.

Heat a high smoke point oil in a deep saucepan over medium heat to about 350°F.

Fry the breaded cheese one block at a time, flipping if needed, until golden brown and crispy all over. Drain on a plate lined with paper towels.

On a serving plate, add half of the roasted tomatoes and lay one block of fried cheese on top.

Top with ribbons of grilled zucchini and a sprinkle of grilled corn, then finish with fresh basil leaves, the juices from the tomatoes, and a drizzle of olive oil.

Repeat with the remaining cheese and tomatoes. Serve immediately.
Creator's notes
The creator used bread cheese, a fresh Finnish cheese with a flavor and texture similar to cheese curds, which worked perfectly; halloumi or another semi-firm cheese can be substituted.
