Taco-Topped Baked Potato Bar
Fluffy slow-cooker russet potatoes split open and loaded with seasoned taco meat, melty cheddar, cool sour cream, and crisp lettuce. It's taco night and baked potato night in one very satisfying dinner.
Ingredients
- 4russet potatoes · cooked using the slow cooker baked potatoes method
- 1 lbtaco meat · cooked with homemade taco seasoning
- 1 cupshredded cheddar cheese
- ½ cupsour cream
- 1 cupshredded lettuce
- —taco sauce · a squirt, to taste
Steps

Slice the cooked potatoes lengthwise down the middle to open them up like a taco.

Pile on the taco toppings: seasoned taco meat, shredded cheddar, sour cream, shredded lettuce, and a squirt of taco sauce. Add any other taco toppings you like.

Serve right away while the potatoes are hot.
Creator's notes
Matthew is a baked potato fool and this was so good. The potatoes take about 4 hours in the slow cooker, so plan ahead.
