Tiramisu Cake

For the espresso Swiss meringue buttercream
- 5egg whites · room temperature
- 1 1/2 cupsgranulated sugar · 300g
- 1 pinchsea salt
- 1 3/4 cupsunsalted butter · 395g, room temperature
- 1 tspvanilla extract · 5mL
- 1 tbspinstant espresso · 15mL; dissolve into the brandy
- 3 tbspbrandy · 45mL
For the coffee soak
- 1 cupstrong coffee · 236g, espresso preferred
- 1/3 cupbrandy · 79mL
- 2 tbspcoffee liqueur · 30mL
For the mascarpone custard
- 1/3 cupsugar · 68g
- 1/3 cupwhole milk · 79mL
- 16 ouncesmascarpone cheese · 450g, room temperature
- 3egg yolks

Preheat the oven to 350°F and prepare your pan. Bring the milk and eggs to room temperature before starting.

In a large bowl, mix the milk, sour cream, egg whites, and extracts with a fork until even throughout.

In an electric mixer, combine the sugar, baking powder, flour, and salt and mix on low speed. Add the butter in cubes, slowly, then continue on low for 2 more minutes.

Set 1/2 cup of the milk mixture aside and add the rest to the flour mixture.

Beat on medium speed for 1 1/2 minutes, then add the reserved 1/2 cup and beat for 1 minute more.
