2-Ingredient Banana Coconut Cookies
Ripe bananas and shredded coconut come together into chewy, golden-edged cookies with just two ingredients. A drizzle of melted chocolate turns them into something that tastes far more decadent than the effort suggests.
Ingredients
- 2ripe bananas
- 2 cupsshredded coconut
- 1/2 cupchocolate chips · optional, for drizzling
Steps
- 1
Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2
In a large bowl, mash the bananas. Add the shredded coconut and use a fork to mix with the bananas until well combined.
- 3
Using a medium 1.5-tablespoon spring-loaded cookie scoop, scoop a rounded ball of cookie dough and place it on the prepared baking sheet, leaving about 2 inches of space between each.
- 4
Meanwhile, place the chocolate chips in a small bowl and microwave in 20-second bursts, stirring each time, until smooth and runny.
- 5
Bake for 12-15 minutes, or until the cookies look set and the coconut is golden.
- 6
Drizzle with the melted chocolate and refrigerate for 30 minutes.
Creator's notes
The chocolate drizzle is optional.
