No-Bake Banana Coconut Bites with Chocolate Shell
Mashed ripe banana and shredded coconut come together into tender no-bake bites, then get dipped in melted chocolate for a crisp shell. A bite-sized, three-ingredient riff on the classic two-ingredient banana coconut cookie.
Ingredients
- 2ripe bananas
- 2 cupsunsweetened shredded coconut
- 1/2 cupchocolate chips
- 1 teaspooncoconut oil · optional

In a large bowl, mash the bananas. Add the shredded coconut and mix with a fork until well combined.

Using a medium 1.5-tablespoon spring-loaded cookie scoop, scoop rounded balls of the mixture onto a lined baking sheet, leaving about 2 inches between each. Makes 12-13 cookies.

Meanwhile, place the chocolate chips and coconut oil in a small bowl and microwave in 20-second bursts, stirring each time, until smooth and runny.

Dip the coconut balls in the melted chocolate, then refrigerate for 30 minutes before serving.
