3-Ingredient Pancake Muffins
Pancake batter baked into soft, domed muffins with your favorite mix-ins folded on top. They're a grab-and-go breakfast that tastes like a stack of pancakes without the plate or the syrup drips.
Ingredients
- 2 1/4 cupspancake mix · of choice, the just-add-water variety
- 1 1/3 cupsmilk · of choice
- 3 tablespoonsmaple syrup
- 1 cupmix-ins · of choice, like chocolate chips, strawberries, blueberries and bananas
Steps

Preheat the oven to 350°F and line a 12-cup muffin tin with parchment paper liners.

In a large bowl, combine the pancake mix, milk and maple syrup. Whisk until smooth.

Fill each muffin cup with the batter, then divide the mix-ins over the top of each muffin.

Bake for 20 to 22 minutes, until the tops are domed and a cake tester inserted in the center comes out clean.
Creator's notes
Made for busy mornings when there's no time to sit down with a plate. Swap the mix-ins to change up the batch.
