7-Layer Mediterranean Dip
Creamy homemade hummus and tangy labneh layered with crisp cucumbers, juicy cherry tomatoes, briny olives, and feta. A vibrant, scoopable crowd-pleaser that beats pasta salad at any picnic.
Ingredients
- 2 15-ounce canschickpeas · rinsed and drained
- ⅓ cuplemon juice
- ¼ cuptahini
- 3garlic cloves
- 1 teaspoonsalt
- 4-5ice cubes
- 8 ounceslabneh
- ½ pintcherry tomatoes · quartered
- 2Persian cucumbers · diced
- 2 ouncescrumbled feta cheese
- ½ cuppitted kalamata olives · sliced
- 4green onions · sliced
- —Extra virgin olive oil · for drizzling
- —Pita chips · for serving

Make the hummus: place the chickpeas in the bowl of a food processor and blend them alone until they become powder-like, scraping down the sides as needed. Add the lemon juice, tahini, garlic cloves, salt, and ice cubes, and blend for about 5 minutes until smooth.

Spoon the hummus into a shallow serving bowl and spread it with the back of a spoon. Add a layer of labneh, followed by the cherry tomatoes, cucumbers, feta cheese, olives, and green onions.

Drizzle olive oil on top right before serving, and enjoy with pita chips.
