Apple Cinnamon Muffins
Tender, bakery-style muffins loaded with fresh diced apples and warm cinnamon, finished with a buttery cinnamon-sugar crumble. They fill the kitchen with the smell of fall the moment they come out of the oven.
Ingredients
For the muffins
- 2 cupsall-purpose flour
- 2 teaspoonsbaking powder
- 2 teaspoonsground cinnamon
- 1/4 teaspoonsalt
- 1/2 cuplight brown sugar · packed
- 1/4 cupgranulated sugar
- 1/2 cupGreek yogurt · at room temperature
- 1/2 cupavocado oil
- 2large eggs · at room temperature
- 2 teaspoonsvanilla extract
- 2medium apples · peeled and diced into small pieces, about 2 cups
For the crumb topping
- 3 tablespoonsbutter · melted
- 1/2 cupall-purpose flour
- 1/4 cuplight brown sugar
- 1 teaspoonground cinnamon

Preheat the oven to 350°F and line a 12-cup muffin pan with parchment paper cups.

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.

In a large bowl, combine the sugars, Greek yogurt, oil, eggs, and vanilla. Whisk until smooth.

Add the dry mixture on top of the wet mixture and whisk until just combined, with no flour streaks remaining. Gently fold in the diced apples, then rest the batter for 10 minutes.

Meanwhile, make the crumb topping: melt the butter in a small bowl, then add the flour, brown sugar, and cinnamon and mix until crumbly.

Divide the batter evenly into the prepared pan, then sprinkle the crumb topping evenly over each muffin.

Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

Let the muffins cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
