Apple Cinnamon Oatmeal Cups
Soft, cinnamon-spiced oatmeal cups studded with fresh apple and pecans, halfway between baked oatmeal and a muffin. They're vegan, naturally sweetened with maple syrup and applesauce, and easy to grab for breakfast.
Ingredients
- 3 cupsrolled oats
- 2 teaspoonscinnamon
- 1 teaspoonbaking powder
- 1/4 teaspoonsalt
- 1 1/2 cupsalmond milk
- 1 cupunsweetened applesauce
- 1/4 cupmaple syrup
- 1 cupapples · finely chopped
- 1/2 cuppecans · chopped, optional
Steps

Preheat the oven to 350°F and spray a 12-cup muffin pan with nonstick spray.

In a large bowl, whisk together the oats, cinnamon, baking powder and salt.

Add the almond milk, applesauce and maple syrup and stir until well combined.

Fold in the chopped apples and pecans.

Spoon the oatmeal mixture into the prepared muffin cups, filling them all the way to the top. The batter will seem a little wet, which is normal.

Bake for 30-35 minutes, until the edges are lightly browned and the tops are set.

Let the cups cool completely in the muffin tin before serving.
