Arayes Pinwheels
Spiced kafta beef spread thin over pitas, rolled up, sliced into pinwheels, and baked on skewers until crisp and browned. A fun, shareable twist on classic arayes, served with yogurt sauce.
Ingredients
- 4wooden skewers · 10- to 12-inch
- 1 pound85% lean ground beef
- ½ cupyellow onion · finely chopped
- 2 tablespoonsparsley · chopped
- 2 tablespoonstomato paste
- 1 tablespoonkafta spice blend
- ¾ teaspoonsalt
- ½ teaspoonblack pepper · divided
- 4thin pitas · large, 10-inch
- —cooking spray
- —yogurt sauce · for serving

Preheat the oven to 475°F. Put the skewers in a shallow dish, cover them with water, and let them soak until you're ready to use them.

In a large bowl, mix the ground beef, onion, parsley, kafta spice, salt, pepper, and tomato paste until well combined.

Lay the pitas on a clean work surface. Divide the beef mixture evenly among them (about 3/4 cup each), spreading it in a very thin, even layer all the way to the edges.

Roll each pita tightly into a log, pressing gently as you roll to pack the filling. Chill for 20 minutes so they slice more cleanly.

Slice each log into 1-inch-thick pinwheels, saving the thinner ends to cook separately. Thread 4 to 5 pinwheels onto each skewer with the cut sides facing out and the pieces touching so they hold their shape.

Spray a baking sheet with cooking spray. Place the skewers cut-side down on the sheet and bake until they start to brown, about 6 minutes.

Flip and bake until crisp in spots, about 4 minutes more.

Switch the oven to broil and cook until the edges are browned and crispy in spots, 2 to 4 minutes, turning once halfway through.

Move the pinwheels to a platter and serve with yogurt sauce.
Creator's notes
Chill the rolled logs for 20 minutes so they slice more cleanly. Cook the thinner end pieces separately.
