Baked Feta Scrambled Eggs
A whole block of feta bakes in the oven surrounded by a dozen eggs, then gets scrambled together into the creamiest, fluffiest eggs. Scoop it into warm pita with fresh mint for an effortless breakfast that feeds a crowd.
Ingredients
- —Avocado oil spray · for greasing the baking dish
- 8 ounceblock feta cheese
- 12eggs
- 2 tablespoonsextra virgin olive oil
- 1/4 teaspoonsalt
- 1/4 teaspoonblack pepper
- 1/4 cupfresh basil · packed and chopped, plus more for serving
- —Fresh mint leaves · for serving
- —Pita bread · for serving
Steps

Preheat the oven to 400°F. Grease an 8x11 baking dish.

Place the feta block in the middle of the prepared baking dish. Crack the 12 eggs around the feta cheese.

Drizzle the olive oil over the feta and eggs. Season the eggs with the salt, then season the eggs and feta with the black pepper.

Bake for 18-22 minutes, until the feta melts and the egg whites around it are cooked.

Use a fork to scramble the eggs and feta together. Don't worry if some of the whites still look wet — they will continue cooking from the heat of the baking dish and the surrounding eggs.

Serve the eggs on their own or scoop them into pita bread with mint leaves to make a sandwich.
