Banana Breakfast Bars
Soft, naturally sweet banana bars made with pantry staples and topped with sliced almonds and a sprinkle of sugar for a crisp finish. Bake a pan ahead and grab one on the way out the door for a busy morning or suhoor.
Ingredients
- 1 cupall-purpose flour
- 1/4 cupoats
- 1/2 teaspoonbaking powder
- 1 cupmashed ripe banana · about 3 medium bananas
- 1large egg
- 1/4 cupmaple syrup
- 1 teaspoonvanilla extract
- 3 tablespoonssliced almonds
- 1 tablespoongranulated sugar
- —milk · amount not stated
- —chocolate chips · optional topping/mix-in; amount not stated
Steps

Preheat the oven to 350°F. Line an 8 x 8-inch pan with parchment paper and set aside.

In a medium bowl, combine the flour, oats, and baking powder.

In another large bowl, mash the banana. Add the egg, milk, maple syrup, and vanilla, and whisk to combine.

Fold the dry ingredients into the wet ingredients, then fold in the chocolate chips.

Transfer the batter to the prepared baking pan and sprinkle the almonds and sugar on top.

Bake for 35-40 minutes, until golden on the outside and firm in the center.

Remove from the oven and let cool completely before slicing into 16 bars.
