Black Bean Burgers
Hearty black bean patties with a firm, satisfying texture thanks to a quick oven-dry on the beans. They cook up beautifully on the stovetop, grill, or in the oven and are perfect for meal-prepped lunches.
Ingredients
- 2 15-ounce cansblack beans · rinsed and dried
- 1/2 cupprepared salsa
- 1/2 cupbreadcrumbs
- 1/4 cupred onion · minced
- 2eggs · beaten
- 2 tablespoonsmustard
- 1 teaspooncumin
- 1/2 teaspoongarlic powder
- 1/2 teaspoonsalt
- 1/2 teaspoonblack pepper
- 2 tablespoonsolive oil · divided

Preheat the oven to 350°F and line a baking sheet with parchment paper. Spread the beans evenly on the baking sheet and bake for 12-15 minutes until slightly dried out, mixing halfway through.

Transfer the beans to a large bowl and mash partially with a potato masher, leaving some beans whole.

Place the salsa in a fine-mesh sieve and stir a few times to drain the excess liquid, then add it to the bowl with the beans.

Add the breadcrumbs, red onion, eggs, mustard, cumin, garlic powder, salt, and pepper, and mix to combine. Refrigerate for 10 minutes to set.

Form the mixture into patties using about 1/3 cup each; this should make about 6-8 patties.

To cook on the stovetop: heat half the oil in a large nonstick grill pan or skillet over medium heat. Add 4 patties and cook 4-5 minutes per side until browned. Repeat with the remaining oil and patties.

To cook on the grill: brush the grill surface with a little oil and cook the patties over medium-high heat for 4-5 minutes per side until browned.

To bake in the oven: place the patties on a lined baking sheet and bake at 375°F for 20 minutes, flipping halfway through.

Serve the burgers on buns with your favorite toppings.
Creator's notes
Drying the beans in the oven before mashing is what gives these patties their firm texture. Great for meal prep — cook a batch for easy lunches through the week.
