Blended Baked Oatmeal
Blended oats bake up into a warm, cake-like breakfast that's sweetened with brown sugar and scented with cinnamon and vanilla. Slice it into squares and customize it however you like.
Ingredients
- 2large eggs
- 1 cupwhole milk
- 1/2 cuplight brown sugar
- 2 tablespoonsbutter · melted, plus more for greasing the baking dish
- 2 teaspoonsvanilla extract
- 2 cupsrolled oats
- 1 1/2 teaspoonsbaking powder
- 1 teaspooncinnamon
- 1/2 teaspoonsalt
Steps

Preheat the oven to 375°F and grease an 8x11 baking dish with a little melted butter.

In a large bowl, whisk the eggs, milk, sugar, butter, and vanilla until well combined.

Add the oats, baking powder, cinnamon, and salt and stir to combine with the wet ingredients.

Transfer the mixture to the greased baking dish.

Bake uncovered until the top of the oatmeal is golden and the mixture is set, about 35-40 minutes.

Remove and allow it to cool for 5 minutes before slicing and serving.
Creator's notes
If you don't like the texture of oatmeal, blend the oats before baking for a cake-like result. The creator used 1/2 cup of Maple Roasted Almond Oath Oats, but regular rolled oats work too.
