Blueberry Cheesecake Baked Oatmeal
A creamy baked oatmeal swirled with jammy blueberries, cream cheese, and dollops of Greek yogurt for cheesecake vibes. It bakes up golden and sliceable, so breakfast is ready all week.
Ingredients
- 2 cupsfrozen blueberries
- 2 tablespoonsgranulated sugar
- 2over ripe bananas
- 4 ouncescream cheese
- 2 tablespoonsground flaxseed
- 1 ½ cupsmilk
- 1 teaspoonvanilla extract
- 2 ½ cupsOath Oats · Substitute 2 cups oats, 1 tsp cinnamon, and ¼ tsp salt

- 3 tablespoonsGreek yogurt

Preheat the oven to 375°F.

In a medium non-stick pan over medium heat, cook the blueberries and granulated sugar until thick, about 8 minutes.

In an 8x11-inch baking dish, mash the bananas and cream cheese. Add the milk, flaxseed, and vanilla extract, then let the mixture stand for 5 minutes so the flaxseed can set. Add the oats and stir to combine.

Spoon the blueberry mixture on top along with dollops of Greek yogurt, then swirl into the oatmeal bake.

Bake uncovered in the preheated oven until the top is golden and the mixture is set, about 30-35 minutes. Remove and let cool for 5 minutes.
