Boy Dinner (Boy Kibble) Beef and Rice Skillet
Seasoned ground beef, bell pepper, and rice all come together in one skillet with scrambled eggs folded through. It's a fast, filling one-pan dinner that's even better with a hit of hot sauce.
Ingredients
- 1 poundground beef
- 1 teaspoongarlic powder
- 1 teaspoononion powder
- 1 teaspoonsmoked paprika
- 1/2 teaspoonsalt
- 1/4 teaspoonblack pepper
- 1 cupdiced bell pepper
- 2 cupscooked white rice
- 2eggs

In a large skillet over medium-high heat, add the ground beef and season with the garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to evenly coat, breaking up the meat with a spatula, until browned and cooked through, about 5-6 minutes.

Add the bell pepper and cooked rice to the skillet and cook for 3-5 minutes, until the rice is heated through and slightly toasted in spots.

Push the mixture to the sides of the skillet to create an empty space in the middle. Crack the eggs into the empty space and scramble them until just set, then mix them into the rice and meat.

Serve immediately as is or with hot sauce.
