Broccoli Crust Pizza
A low-carb, gluten-free pizza built on a cheesy broccoli crust that bakes up sturdy enough to slice and hold your favorite toppings. Finished with creamy roasted garlic sauce, melty mozzarella, and chopped chicken.
Ingredients
- 1 large headbroccoli · cut into florets
- 1egg
- 2 tablespoonsChosen Foods mayonnaise
- 2 cupsmozzarella cheese · divided
- 1/2 teaspoonItalian seasoning
- 1/2 teaspoongarlic powder
- 1/4 teaspoonsalt
- 1/4 teaspoonblack pepper

Steps

Preheat the oven to 425°F. Line a round 14-inch pan with parchment paper and set aside.

Place the broccoli florets in the bowl of a food processor and pulse until the broccoli is grated and looks like rice or couscous, being careful not to over-pulse.

Transfer the broccoli to a microwave-safe bowl and cook for 2 minutes, or until softened.

Spread the steamed broccoli on an open cheesecloth or dish towel and let it cool.

When it's cool to the touch, wrap the broccoli in the towel and squeeze out all the excess water so it is as dry as possible.

Transfer the broccoli to a large bowl and add the egg, mayonnaise, 1 cup of the mozzarella cheese, Italian seasoning, garlic powder, salt, and pepper. Mix until well blended and a dough forms.

Place the dough on the prepared pan and shape it into a round pizza crust about 1/2-inch thick.

Bake for 12-14 minutes, until golden.

Remove from the oven and add your desired sauce, the remaining mozzarella cheese, and any other toppings.

Return to the oven and bake until the cheese is melted and the crust is crisp, about 10 more minutes.

Cool for a few minutes before cutting and serving.
