Brown Butter and Bread Flour Chocolate Chip Cookies
Thick, bakery-style chocolate chip cookies made with nutty browned butter and chewy bread flour. They have crisp edges, gooey centers and a sprinkle of smoked sea salt on top.
Ingredients
- 226 gramssalted butter
- 220 gramsgranulated sugar
- 140 gramsdark brown sugar
- 2extra large eggs
- 300 gramsbread flour
- 2 teaspoonsbaking powder
- 2 teaspoonsDiamond Crystal kosher salt · use half if using Morton's
- 6 ouncesGuittard bittersweet chocolate chips · 170 grams; chop most but not all
- —Maldon smoked sea salt · for topping
Steps

Preheat the oven to 400°F with the rack in the middle.

Brown the butter in a small saucepan, then let it cool until it is solid.

Using an electric mixer, beat the browned butter with the granulated and dark brown sugars. Add the eggs and beat until the mixture is fluffy.

Add the bread flour, salt and baking powder and mix on low until just combined.

Add the chopped chocolate and mix it in by hand.

Portion the dough into 9 scoops of about 110 grams each.

Bake at 400°F for 10-11 minutes, until the edges are crisp but the centers are still underdone.

Sprinkle the smoked sea salt on top of the cookies, then let them cool before serving.
