Cheesy Leftover Mashed Potato Balls
Chilled mashed potatoes wrapped around a cube of creamy Havarti, breaded in panko and baked until golden. They crisp up on the outside and turn molten and cheesy inside — an easy holiday appetizer.
Ingredients
- 1 blockRoth Creamy Havarti cheese · 8-ounce block
- 3 cupsmashed potatoes · chilled
- 1/2 cupflour
- 1egg · large
- 1 1/2 cupspanko bread crumbs
- —avocado oil spray
Steps

Cut the Havarti cheese into 48 cubes. Reserve half of the cubes for a cheese board and set the other half aside.

In a small bowl, whisk the egg. Add the panko bread crumbs to a separate bowl.

Scoop about 1 1/2 tablespoons of the mashed potatoes, stuff a cheese cube inside, roll into a ball, then dip in the flour. Set aside.

Preheat the oven to 400°F.

Using a fork, place each ball in the whisked egg, then carefully remove it, draining any excess egg. Dip in the bread crumbs and turn until fully coated.

Grease a mini muffin tin with avocado oil spray. Place each mashed potato ball into a muffin cup to hold its shape while baking.

Bake for 15 minutes, or until golden and crisp on the outside. Use a spoon to push in any melted cheese that oozes out.

Let the balls cool for a few minutes, then serve warm with a dip, if desired.
