Cheesy Ranch Potato Waffles
Crispy, golden waffles made from mashed potatoes, eggs, and melty mozzarella, with creamy ranch mixed right into the batter. Serve them warm with extra ranch for dipping.
Ingredients
- 2 cupsmashed potatoes
- 1/2 cupall-purpose flour
- 2eggs · large
- 1/4 cupChosen Foods Classic Ranch Dressing
- 2 tablespoonschopped chives or parsley
- 1 cupshredded mozzarella cheese

- —ranch dressing · extra, for serving
Steps

Preheat a waffle iron according to the manufacturer's instructions.

In a large bowl, mix the mashed potatoes, flour, eggs, ranch dressing and parsley until well combined.

Spray the hot waffle iron with cooking spray, add about 1 tablespoon of shredded cheese followed by 1/3 cup waffle batter. Repeat for the remaining waffle sections and close the iron.

Cook until the waffles are golden brown and crisp, about 5 minutes. Transfer to a wire rack and repeat with the remaining batter.

Serve warm with extra ranch dressing for dipping.
