Chickpea Bites Meal Prep
Crispy baked chickpea bites flavored with lime, toasted sesame, and warm spices, served with a zesty avocado dip and crunchy veggies. It's a lunch packed with protein and fiber that works well for meal prep.
Ingredients
Chickpea bites
- 1 canchickpeas · 15 ounces, drained and rinsed
- 3/4 cupbreadcrumbs · divided
- 1/3 cupall-purpose flour
- 1egg · large
- 1lime · juiced
- 2 teaspoonstoasted sesame oil
- 1 teaspoongarlic powder
- 1 teaspoononion powder
- 1/2 teaspoonsalt
- 1/2 teaspooncumin
- 1/4 teaspooncayenne pepper
- —black pepper · to taste
- —cooking spray
Avocado dip
- 1avocado · mashed
- 1lime · zested and juiced
- 1/2 teaspoongarlic powder
- 1/2 teaspoononion powder
- —kosher salt · to taste
- —black pepper · to taste
For serving
- —snap peas
- —carrots
- —trail mix

Preheat the oven to 425°F and line a baking sheet with parchment paper.

In a food processor, combine the chickpeas, 1/2 cup of the breadcrumbs, flour, egg, lime juice, sesame oil, garlic powder, onion powder, salt, cumin, cayenne pepper, and black pepper. Process until the mixture sticks together in a ball.

Put the remaining 1/4 cup of breadcrumbs in a shallow bowl. Roll 2 tablespoons of the chickpea mixture into a ball (a cookie scoop helps) and flatten it into a 1/2-inch-thick disc.

Coat the disc in breadcrumbs and place it on the prepared baking sheet. Repeat with the rest of the chickpea mixture.

Spray the chickpea bites with nonstick spray and bake until golden brown, 20-25 minutes, flipping halfway through.

While the bites bake, make the avocado dip: in a medium bowl, combine the mashed avocado, lime zest and juice, garlic powder, and onion powder. Season with kosher salt and black pepper to taste.

Serve the chickpea bites with the avocado dip, snap peas, carrots, and trail mix, or divide everything into containers for meal prep.
