Chimichurri Steak & Egg Sandwich
Seared skirt steak, a fried egg, and bright herby chimichurri stacked on toasted sourdough with garlic aioli and peppery greens. Crushed sour cream and onion chips tucked inside add the crunch that makes it.
Ingredients
For the Chimichurri
- 1/2shallot · finely diced
- 2 clovesgarlic · minced
- 1 cupparsley · diced
- 1 tbsporegano
- 2 tbspred wine vinegar
- 1/2 tbsplemon juice
- 1/2lemon, zested · zest only
- 1/2 tspred pepper flakes
- 1/2 tspsalt
- 1/2 cupolive oil
For the Steak
- —olive oil · drizzle
- 1 lbskirt steak
- —salt and pepper · to taste
For the Sandwich
- —olive oil · drizzle
- 2eggs
- 4 slicessourdough bread
- 1/4 cupgarlic aioli
- —arugula · fresh
- —microgreens · fresh
- —sour cream and onion potato chips · plus more for serving

Make the chimichurri: in a small bowl, combine the diced shallot, garlic, parsley, oregano, red wine vinegar, lemon juice, lemon zest, red pepper flakes, salt, and olive oil. Mix until completely combined and set aside.

Preheat a cast-iron grill skillet over high heat and drizzle with olive oil.

While the pan heats, season the steak liberally on both sides with salt and pepper.

Sear the steak in the hot pan for 3 to 4 minutes per side, until it reaches an internal temperature of 135-140°F.

Transfer the steak to a cutting board, cover with aluminum foil, and let rest for 5 minutes. Slice against the grain with a sharp knife.

Preheat a medium frying pan and drizzle with olive oil. Fry the eggs to your preferred doneness, then remove from the pan.

While the steak rests, toast the sourdough slices in the same hot grill skillet, then place two slices on each of two serving plates.

Spread one side of each slice with garlic aioli.

Top one slice of each sandwich with arugula, then steak. Add chimichurri, a fried egg, microgreens, and potato chips.

Close each sandwich with the second slice of bread and serve with additional chips on the side.
