Chocolate Sugar Cookies
Soft, rich, and chewy chocolate cookies rolled in granulated sugar for a sparkly, crackly finish. A touch of instant coffee deepens the chocolate flavor, and the whole batch comes together with just a mix, scoop, and bake.
Ingredients
- 1 cupall-purpose flour
- 1/2 cupcocoa powder
- 2 teaspoonsbaking powder
- 1/4 teaspoonsalt
- 1/2 cupunsalted butter · softened
- 1 cup + 2 tablespoonsgranulated sugar · divided
- 1 tablespooninstant coffee or espresso powder · optional
- 1large egg · room temperature
- 1 teaspoonvanilla extract

Preheat the oven to 350°F and line two large baking sheets with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

In the bowl of a stand mixer fitted with a paddle attachment, add the softened butter, 1 cup of the sugar, and the instant coffee. Cream on medium-high speed until light and fluffy, about 3 minutes.

Add the egg and vanilla and continue mixing for another 2-3 minutes to combine well.

Add the flour mixture gradually, mixing until just combined and no flour streaks remain.

Pour the remaining 2 tablespoons of sugar into a small bowl.

Using a 1.5 tablespoon spring-loaded cookie scoop, scoop 9 dough balls onto each prepared baking sheet about 2 inches apart. Gently roll into even balls, then coat each in the sugar.
