Copycat Starbucks Pumpkin Bread
A super moist pumpkin loaf that tastes just like the Starbucks favorite, warm with pumpkin pie spice and topped with crunchy pumpkin seeds. It's a fail-proof one-bowl-style bake that fills the kitchen with fall flavor.
Ingredients
- 1 1/2 cupsall-purpose flour
- 1 tablespoonpumpkin pie spice
- 1 teaspoonbaking soda
- 1/2 teaspoonsalt
- 1/2 cupunsalted butter · room temperature
- 1 cupgranulated sugar
- 1/4 cuplight brown sugar · packed
- 4eggs
- 1 cupcanned pumpkin
- 1/2 teaspoonvanilla extract
- 1/4 cuppumpkin seeds · optional
Steps

Preheat the oven to 350°F. Spray a loaf pan with nonstick cooking spray.

In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. Set aside.

In a stand mixer with a whisk attachment or in a large bowl with a hand mixer, beat the butter, granulated sugar, and light brown sugar until light and fluffy, about 2 minutes.

Add the eggs one at a time, mixing until each is incorporated. Add the canned pumpkin and vanilla extract and mix to combine.

Add the dry ingredients and mix until no streaks of flour remain.

Pour the batter into the prepared loaf pan and sprinkle with the pumpkin seeds, if using.

Bake for 50-55 minutes, until a toothpick inserted in the center comes out clean.

Remove from the oven and let the bread cool completely in the pan set on a wire rack before slicing.
Creator's notes
The creator notes she rushed the recipe and didn't properly cream the butter with the sugar first, and it still turned out great — the recipe is easy and fail-proof.
