Costco Copycat Rice Krispy Treat Cookies
Brown butter cookies loaded with crispy Rice Krispies cereal and pockets of melty marshmallow. They taste exactly like a rice krispy treat baked into a thick, chewy cookie.
Ingredients
- 1 cupunsalted butter · 2 sticks
- 3/4 cuplight brown sugar
- 2/3 cupgranulated white sugar
- 2large eggs
- 1/2 tablespoonvanilla extract
- 2 1/4 cupsall-purpose flour
- 1 teaspoonbaking soda
- 1 teaspoonsalt
- 1 to 1 1/2 cupsRice Krispies cereal
- 1 to 1 1/2 cupsmini marshmallows · frozen

Spread the mini marshmallows out on a parchment-lined tray and freeze them for 1 hour before starting the rest of the recipe.

In a medium saucepan over medium heat, cook the butter, swirling occasionally, until it melts, foams, then turns golden brown and smells nutty, about 5 to 7 minutes.

Remove from the heat and pour into a heatproof bowl. Cool in the fridge just until room temperature, about 10 to 15 minutes; it should still be liquid, not solid.

In a large bowl, cream the cooled brown butter with the light brown sugar and granulated sugar until smooth and well combined.

Add the eggs and vanilla extract and mix until fully incorporated.

In a separate bowl, whisk together the flour, baking soda, and salt.

Add the dry ingredients to the wet ingredients and mix until just combined, with no streaks of flour remaining.

Fold in the Rice Krispies cereal and frozen mini marshmallows until evenly distributed.

Preheat the oven to 350°F and line a baking sheet with parchment paper.

Using a 1/4 cup scoop, portion the dough onto the baking sheet, spacing the cookies about 2 inches apart. Press each one down slightly if you like flatter cookies.

Bake for 10 to 12 minutes, until the edges are set and lightly golden.

As soon as they come out of the oven, gently press each cookie down with a spatula for an even, flat top.

Let the cookies cool on the baking sheet for 15 minutes before enjoying.
Creator's notes
Freezing the mini marshmallows first keeps them from melting out of the cookies in the oven.
