Cottage Cheese Pizza
A high-protein pizza crust made from just cottage cheese and self-rising flour, topped with sauce and melty mozzarella. It comes together in half an hour with no yeast and no rising time.
Ingredients
For the crust
- 1 1/2 cupall-purpose flour · plus more as needed
- 1 1/2 teaspoonbaking powder
- 1/4 teaspoonsalt
- 1 cupfull-fat cottage cheese
For the topping
- 1/2 cuppizza sauce
- 1/2 cupshredded mozzarella
Steps

Preheat the oven to 450°F. Line a large baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, and salt. Add the cottage cheese and mix with a wooden spoon until all the ingredients are well combined.

Transfer the dough to a lightly floured surface and knead by hand for 5 minutes, until the dough feels smooth; some bumps are fine.

Use a rolling pin to flatten the dough into a round about 9 inches wide. Bake for 5 minutes.

Remove the crust from the oven and carefully add the pizza sauce, mozzarella, and any other toppings. Continue baking until the crust is lightly browned and the cheese has melted, 5 to 7 more minutes.

Let cool slightly, then cut into 6 slices.
Creator's notes
You can swap the flour, baking powder, and salt for 1 1/2 cups self-rising flour.
