Crispy Baked Rolled Tacos with Tajín Crumbled Feta
Corn tortillas rolled tight around seasoned taco meat and baked until golden and crackly. A shower of Tajín-spiced crumbled feta plus salsa and guacamole turns them into the easiest taco night upgrade.
Ingredients
- 1 poundprepared taco meat
- 16small corn tortillas
- —cooking spray
- —salsa · for serving
- —guacamole · for serving
- —Athenos Tajín Crumbled Feta · for serving
- 1 Tbspflour · for the flour paste
- 2 Tbspwater · for the flour paste
Steps

Preheat the oven to 425°F. Lightly grease a baking sheet or pan with cooking spray.

Stir together 1 tablespoon flour and 2 tablespoons water to make a flour paste.

Wrap the corn tortillas in a damp towel and microwave for about 30 seconds, until pliable.

Line up 8 of the corn tortillas and brush the middle of each with flour paste. Place about 2 tablespoons of taco meat along the center of each tortilla. Repeat with the remaining 8 tortillas and taco meat.

Tightly roll each tortilla and place it seam-side down on the prepared baking sheet.

Spray the tops with cooking spray and bake for 15-20 minutes, until golden and crispy.

Serve with salsa, guacamole, and Tajín crumbled feta.
