Crispy Beef Tacos
Golden, pan-fried tortillas stuffed with spiced ground beef and melted cheese for a shatteringly crisp exterior and juicy filling. Open them up at the table and pile on shredded lettuce, tomato, onion, and pickled jalapeño.
Ingredients
For the Ground Beef
- 1yellow onion · medium, diced
- 1 clovegarlic · grated
- 1 lbground beef · 80% lean
- 1 tbsptomato paste
- 1 tspchili powder
- 1/2 tspground cumin
- 1 tsppaprika
- 1/2 tspblack pepper
- —salt · to taste
- 1/2 cupwarm water
- —oil · a drizzle, for sautéing
For Assembly
- 1 cupcheddar or Mexican blend cheese · shredded
- —small flour tortillas
- —oil · enough to cover the bottom of the skillet for frying
For Serving
- —iceberg or romaine lettuce · shredded
- —fresh tomato · diced
- —white onion · diced
- —cilantro · chopped
- —pickled jalapeño

Preheat a large pan over medium-high heat. Add a drizzle of oil, then the diced onion and grated garlic, and sauté until the onion is translucent and lightly browned, about 3-4 minutes.

Add the ground beef and cook until browned, breaking it apart as it cooks.

Stir in the tomato paste, chili powder, cumin, paprika, black pepper, and salt until combined.

Add the water and bring to a simmer, cooking until most of the liquid has cooked out. Remove from heat and set aside.

Lay a small tortilla on a work surface. Sprinkle cheese over one half, top with the beef mixture and more cheese, then fold the tortilla over. Repeat with the remaining tortillas.

Preheat a skillet over medium-high heat and add enough oil to cover the bottom of the pan. Cook a couple of tacos at a time for 1-2 minutes per side, until golden brown and crispy.

To serve, open the tacos, add your favorite fresh toppings or salsa, then close them back up and enjoy.
