Crispy Cheddar Carrot Chips
Thin carrot slices seasoned with smoked paprika and garlic, baked onto piles of sharp cheddar until the cheese turns golden and crisp. They shatter like a chip and beg for a swipe of ranch.
Ingredients
- 4medium carrots · peeled and thinly sliced into matchsticks or rounds
- 1 tablespoonolive oil
- 1 teaspoongarlic powder · divided
- 1 teaspoononion powder · divided
- 1 teaspoonsmoked paprika · divided
- 1/2 teaspoonsalt
- 1/4 teaspoonblack pepper
- 2 cupsshredded sharp cheddar cheese

Preheat the oven to 400°F. Line a large rimmed sheet pan with parchment paper.

In a medium bowl, toss the sliced carrots with the olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon smoked paprika, salt, and pepper until evenly coated.

Sprinkle the shredded cheddar onto the prepared baking sheet in small piles. Sprinkle over the remaining garlic powder, onion powder, and paprika and toss to combine.

Gently press the seasoned carrot slices on top of each cheese pile.

Bake for 12–15 minutes, until the cheese is bubbly and the edges are golden brown.

Let them cool for a few minutes on the pan so they crisp up fully before removing. Serve warm with ranch for dipping.

A variation on the viral crispy cheese onion rings. Made with Cabot Seriously Sharp Cheddar, which has 0g lactose per serving. Great on their own or with a ranch dip.
