Feta Chicken Nuggets
Homemade air-fried chicken nuggets blended with crumbled feta for a creamy, tangy twist on the classic. Crisp golden breading outside, tender seasoned chicken inside, ready for dunking.
Ingredients
- 1 1/2 poundschicken breasts
- 1egg
- 1/2 cupAthenos crumbled feta cheese
- 1 tablespoonketchup
- 1 tablespoonmustard
- 1 teaspoonpaprika
- 1 teaspoongarlic powder
- 1/2 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1 cupbreadcrumbs · divided
- —avocado oil spray · for cooking
Steps

Place the chicken breasts in the bowl of a food processor and process until ground.

Add the egg, feta cheese, ketchup, mustard, paprika, garlic powder, salt, pepper, and 1/2 cup of the breadcrumbs. Pulse a few times until just combined, being careful not to overwork the chicken.

Using a spring-loaded cookie scoop, scoop about 1 1/2 tablespoons of the chicken mixture and form into nugget shapes.

Place the remaining 1/2 cup breadcrumbs in a shallow bowl. Dip each nugget into the breadcrumbs and set on a parchment-lined plate while you form the rest. You should get 30-32 nuggets.

Preheat the air fryer to 400°F. Place half the nuggets in the air fryer and spray with avocado oil spray. Air fry for 12-13 minutes, or until the breading is golden brown and the chicken is cooked through.

Repeat with the remaining nuggets, then let them cool for a few minutes before serving with your favorite dipping sauce.
Creator's notes
Feta replaces the usual milk and bread in chicken nuggets, adding creaminess and a little tang without changing the texture.
