Grilled Feta Pizza
A block of feta and grape tomatoes grill together in a foil packet until melty and burst, then get mashed into a tangy, cheesy sauce for charred grilled pizza dough. Finished with fresh basil, it's an unexpected twist on baked feta pasta.
Ingredients
- 1 cupgrape tomatoes · halved
- 1 8-ounce blockfeta cheese · drained
- 3 clovesgarlic
- 2 tablespoonsolive oil · plus more for brushing
- 1 tablespoonbasil · chopped
- ¼ teaspoonblack pepper · freshly ground
- 1 poundpizza dough · room temperature
- Handfulfresh basil leaves

Preheat the grill to high (500°F).

On a large piece of foil, place the tomatoes, feta, garlic, olive oil, chopped basil and black pepper in a small pile. Wrap the foil edges to close into a pocket and place on the preheated grill for 15 minutes, or until the tomatoes burst and the feta melts.

Meanwhile, place a large piece of parchment paper on a flat surface and lightly flour it. Stretch the pizza dough into a 12–14 inch round on top of the parchment. Brush the top with a drizzle of olive oil.

Place the dough oiled side down onto the hot grates. Close the lid and cook 2–3 minutes, until the bottom is firm with light char. Brush the exposed side with more olive oil, flip, and grill 2 minutes more.

Remove the crust and set aside on a platter.

When the feta and tomatoes are done, carefully open the foil packet and use a fork to mash the tomatoes and feta together into a thick sauce.

Spread the sauce over the grilled pizza crust. Top with fresh basil leaves, slice, and enjoy immediately.
