High-Protein Baked Feta Pasta with Salmon
A protein-packed spin on baked feta pasta where salmon fillets roast alongside a block of feta and cherry tomatoes until everything melts into a creamy sauce. Wilted spinach and penne get tossed right in for a one-dish dinner.
Ingredients
- 4salmon fillets · 6 ounces each, skin removed
- 1 blockfeta cheese · 8 ounces
- 1 cupcherry tomatoes
- 3 tablespoonsolive oil
- 2 teaspoonsoregano
- ½ teaspoongarlic powder
- ½ teaspoonsalt
- ½ teaspoonblack pepper
- 5 ouncesfresh baby spinach
- 8 ouncespenne pasta · cooked al dente

Preheat the oven to 400°F.

Add the feta, cherry tomatoes and salmon to a 9x13 baking dish. Drizzle with olive oil, then add the oregano, garlic powder, salt and pepper.

Bake for 20-25 minutes, until the salmon is cooked through and flakes easily with a fork and the tomatoes have burst.

Remove from the oven and add the spinach directly to the hot dish. Let it sit for 2-3 minutes to wilt.

Use a fork to gently flake the salmon and mash the feta and tomatoes together until creamy, then stir everything together to create a sauce.

Add the cooked penne and toss until fully coated. If needed, add 2-3 tablespoons reserved pasta water to loosen the sauce.
