High-Protein Cottage Cheese Bagels
Just three ingredients turn cottage cheese and self-rising flour into puffy, golden bagels with a chewy crumb and a protein boost. Bake them in the oven or air fry them, then top with everything seasoning for a breakfast that eats like the real thing.
Ingredients
- 1 cupfull-fat cottage cheese · excess liquid drained
- 1 cupself-rising flour · plus more as needed
- 1large egg · beaten, for egg wash
- —everything bagel seasoning · or sesame seeds or other topping of choice
- —nonstick cooking spray
Steps
- 1
Place the cottage cheese in a blender and blend on high until smooth, stopping to scrape down the sides as needed, about 1 minute.
- 2
Transfer the blended cottage cheese to a large bowl, add the flour, and mix with a wooden spoon until well combined.
- 3
Turn the dough out onto a lightly floured surface and knead by hand for 5 minutes, until it feels smooth (some bumps are fine). Add more flour as needed so the dough is not sticky.
- 4
Divide the dough into 4 equal pieces, about 80-90 grams each. Roll each piece into a 6-7-inch rope about 1 inch thick, join the ends into a circle, and pinch the seam tightly to seal.
- 5
Brush the tops with the beaten egg and sprinkle with your seasoning of choice.
- 6
Air fryer method: Preheat the air fryer to 350°F. Spray the basket with nonstick spray and air fry for 13-15 minutes, until puffed and golden brown.
- 7
Oven method: Preheat the oven to 350°F and line a sheet pan with parchment paper. Bake on the top rack for 25-30 minutes, until puffed and golden brown.
- 8
Let the bagels cool for 15 minutes, then slice and serve.
Creator's notes
Cook in either an air fryer (13-15 minutes) or the oven (25-30 minutes). Draining excess liquid from the cottage cheese and adding extra flour as needed keeps the dough from getting sticky.
