Hot Honey Ground Beef Cottage Cheese Bowls
Roasted sweet potatoes, spiced ground beef, and cool cottage cheese come together in a bowl that eats like a loaded taco salad. A quick sriracha hot honey drizzle and diced avocado tie it all together.
Ingredients
- 2large sweet potatoes · peeled and diced
- 3 tablespoonsolive oil · divided
- 1 teaspoonsalt · divided
- 1 teaspoonblack pepper · divided
- 3 teaspoonspaprika · divided

- 1 poundlean ground beef
- 2 tablespoonshoney
- 1 teaspoonsriracha
- 1/4 teaspooncrushed red pepper
- 2 cups2% low fat cottage cheese
- 1avocado · diced

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

Add the sweet potatoes to the prepared baking sheet. Drizzle with olive oil and season with 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon garlic powder. Toss the sweet potatoes and arrange in a single layer. Roast for 30-40 minutes, flipping halfway through, until the sweet potatoes are knife tender.

Meanwhile, heat the remaining olive oil in a non-stick skillet over medium heat. Add the ground beef, remaining 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 teaspoons paprika, and 1 teaspoon garlic powder. Use a spatula or wooden spoon to break up the beef while stirring occasionally, until the beef is browned all over, about 10 more minutes.

In a small bowl, heat the honey for 10 seconds in the microwave. Add the sriracha and crushed red pepper and whisk to combine.

Assemble four bowls by dividing the sweet potatoes, ground beef, cottage cheese, and avocado. Drizzle with the hot honey and enjoy immediately.
