Italian Chopped Salad
A crisp, colorful chopped salad loaded with romaine, chickpeas, fresh mozzarella, olives, and pepperoncini, all tossed in a punchy red wine vinaigrette. Every bite is easy to eat and ready in about 15 minutes.
Ingredients
For the salad
- 1 large headromaine lettuce · chopped (about 6 cups)
- 1 cupcherry tomatoes · halved
- 1 15-ounce canchickpeas · rinsed and drained
- 2Persian cucumbers · diced
- 1/2 cuppepperoncini · sliced
- 1/2 cupartichoke hearts · chopped; marinated or canned
- 1/2 cupgreen olives · sliced
- 8 ouncesfresh mozzarella cheese · diced
- 1/4small red onion · chopped
- 2 tablespoonsgrated Parmesan cheese
- 2 tablespoonsfresh basil · chopped
For the dressing
- 1/4 cupextra-virgin olive oil
- 3 tablespoonsred wine vinegar
- 1 teaspoonDijon mustard
- 1 clovegarlic · minced
- 1 teaspoondried oregano
- 1/2 teaspoonsalt
- 1/4 teaspoonblack pepper

In a large bowl, combine the romaine, tomatoes, chickpeas, cucumbers, pepperoncini, artichoke hearts, olives, mozzarella cheese, red onion, Parmesan cheese, and basil.

In a small jar or bowl, whisk together the olive oil, vinegar, mustard, garlic, oregano, salt, and pepper until well combined.

Pour the dressing over the salad just before serving and toss until everything is evenly coated.
