Low-Carb Lebanese Meat Pies with Rice Paper
Spiced Lebanese beef filling with tomato, parsley, sumac and 7 Spice folded into rice paper squares and air-fried until golden and shatteringly crisp. All the flavor of classic sfeeha without the dough.
Ingredients
- 2 tablespoonsolive oil
- 1medium onion · diced
- 1 pound95% lean ground beef
- 2Roma tomatoes · seeded and finely chopped
- ¼ cupfresh parsley · finely chopped
- 1 teaspoonsalt
- 2 teaspoons7 Spice
- 2 teaspoonssumac
- ½ teaspooncinnamon
- 12–14round rice paper sheets
- —olive oil spray

Heat the olive oil in a medium skillet over medium heat. Add the diced onion and cook until soft and translucent, about 8–10 minutes.

Add the ground beef and cook, breaking it apart, until browned and fully cooked through, about 8–10 minutes.

Stir in the tomatoes and parsley. Season with the salt, 7 Spice, sumac, and cinnamon. Cook for 2–3 more minutes, until everything is well combined and most of the moisture has evaporated. Remove from the heat and let the mixture cool slightly.

Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 5–7 seconds, until just pliable.

Place the sheet on a clean surface. Spoon about 2–3 tablespoons of the meat mixture into the middle and fold 4 times to make a square. Wrap in a second layer of rice paper, then transfer to the air fryer in a single layer. Repeat with the remaining sheets and filling.

Lightly spray the tops of the meat pies with olive oil. Air fry at 400°F for 8–12 minutes, until golden brown and crispy.

Let cool slightly so they crisp up further before serving.
