Mango Chia Pudding
Creamy chia pudding blended with fresh mango so it tastes like mango ice cream, with about 20g of protein per serving. It sets overnight in the fridge for an easy make-ahead breakfast.
Ingredients
- 2 tablespoonschia seeds
- 1/2 cupalmond milk · or milk of choice
- 1 tablespoonhoney · or other sweetener, optional
- 1/4 cupmango · fresh or frozen, per serving
Steps

Blend 1/4 cup fresh or frozen mango with the milk until smooth.

Pour the mango milk, chia seeds, and honey into a jar and mix well. Let settle for 2-3 minutes, then mix again very well until you see no clumping.

Cover the jar and refrigerate overnight, or for at least 2 hours.

When you're ready to eat it, top with your favorite fruit and enjoy cold.
