Matcha Cookies
Thick, chewy cookies with a deep matcha flavor and pools of melty white chocolate throughout. The brown-butter-adjacent melted butter base gives them crisp edges and a soft, fudgy center.
Ingredients
- 1 cupunsalted butter · 226g
- 2 tablespoonswhole milk · 32g
- 2large eggs
- 3/4 cupdark brown sugar · 150g, densely packed
- 3/4 cup and 1 tablespoongranulated sugar · 180g
- 2 cups and 2 tablespoonsall-purpose flour · 300g
- 1/4 cupmatcha powder · 30g
- 1 teaspoonDiamond Crystal kosher salt
- 1/2 teaspoonbaking soda
- 1 teaspoonbaking powder
- 1 1/2 cupschopped white chocolate · 270g
Steps
- 1
Melt 1 cup of butter in a large bowl on the stove or in the microwave until just melted but not hot. Ideally leave some pieces unmelted and whisk them into the rest so the butter comes together with a nice milky texture.
- 2
Whisk in the 32g of milk. Crack in two eggs and mix. Add 150 grams of brown sugar and 180 grams of granulated sugar and whisk until combined.
- 3
In a medium bowl, whisk together 300 grams flour, 30 grams matcha powder, 1 teaspoon kosher salt, 1/2 teaspoon baking soda, and 1 teaspoon baking powder.
- 4
Add the dry ingredients to the wet ingredients in two batches and mix into a dough. Fold in 270 grams of white chocolate, reserving about 1/4 cup for topping.
- 5
Scoop the dough into 15 equal balls, about 85 grams each.
- 6
Place the dough balls in the fridge to chill while you preheat the oven to 350°F convection (375°F standard).
- 7
Place the cookies on a parchment-lined baking sheet, press a few pieces of the reserved white chocolate into each one, and bake for 10-12 minutes.
- 8
Smack the sheet pan on the counter to help the cookies flatten, then let them cool for 15 minutes before transferring them off the baking sheet.

Basil Tomato Salmon
Crispy-skinned salmon finished in a jammy tomato-shallot broth spiked with Calabrian chili, then crowned with a bright basil-parmesan-lemon sauce. Serve with crusty bread to soak up every bit of the broth.
Sizzling Harissa Eggplant with Chickpeas
Whole eggplants get grilled until collapsing-soft, then butterflied and packed with a spiced harissa mixture of chickpeas and cherry tomatoes. Everything goes back on the heat until sizzling and charred, finished with cool feta and fresh mint.
