One-Pan Cottage Cheese Fried Eggs
Cottage cheese and parmesan crisp up in a hot skillet to make a golden, custardy base for eggs with runny yolks. Finished with chili oil and green onions, it's a high-protein breakfast built for scooping up with crusty toasted bread.
Ingredients

- 1 cupcottage cheese · enough to cover the bottom of the pan
- —parmesan
- 4-5eggs
- —chili oil · or salt and pepper
- —green onions · sliced, for garnish
- —crusty bread · toasted, for serving
Steps

Add butter (or avocado oil) to a skillet over medium heat.

Spread the cottage cheese across the pan, using just enough to cover the bottom, then sprinkle parmesan over the top.

Once the cottage cheese starts bubbling, crack in 4 to 5 eggs.

As the eggs cook, drizzle with chili oil, or season with salt and pepper instead.

When the whites are set but the yolks are still runny, take the pan off the heat.

Creator's notes
Adding cottage cheese to eggs makes them creamier and boosts the protein. Avocado oil works in place of butter, and salt and pepper can stand in for the chili oil.
