Peanut Butter Crunch Balls
No-bake peanut butter bites packed with crushed crackers and protein powder, then dipped in a glossy semi-sweet chocolate shell. They're crunchy, lightly sweet, and perfect for a grab-and-go snack.
Ingredients
- 1 cupcrushed Crunchmaster crackers
- 1/2 cupcreamy peanut butter
- 3 tablespoonsvanilla protein powder
- 2 tablespoonshoney
- 1/2 cupsemi-sweet chocolate chips
- 1 teaspooncoconut oil · optional

Add the crushed crackers to a medium bowl. Stir in the peanut butter, honey, and protein powder until well combined. The mixture should hold together when pressed; if it feels too dry, add 1-2 teaspoons more peanut butter.

Scoop about 1 tablespoon of the mixture and roll into balls. Place them on a parchment-lined baking sheet.

Refrigerate the balls for 15-20 minutes, until firm.

In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each, until smooth.

Dip each chilled ball into the melted chocolate using a fork, letting the excess drip off, then return it to the parchment paper.

Refrigerate for another 10-15 minutes, or until the chocolate is set.
Creator's notes
If the mixture feels too dry to hold together, add 1-2 teaspoons more peanut butter. The coconut oil is optional but helps the melted chocolate coat smoothly.
