Pizza Beans
White beans simmered in marinara under a blanket of melted mozzarella and Parmesan, loaded with pizza toppings and baked until bubbling. All the pizza flavor with none of the dough — and a serious hit of protein and fiber.
Ingredients
- 2 15-ounce canswhite beans · drained and rinsed
- ¾ cupmarinara sauce
- 1 teaspoondried oregano · divided
- ½ teaspoongarlic powder
- ¾ cupshredded mozzarella cheese
- 2 tablespoonsgrated Parmesan cheese
- 1small tomato · sliced, optional
- ¼small green pepper · sliced
- 2 tablespoonssliced black olives
- ¼ teaspooncrushed red pepper flakes
- —fresh basil · for serving
Steps

Preheat the oven to 400°F.

Add the drained white beans to a 10-inch baking dish or skillet. Stir in the marinara sauce, ½ teaspoon oregano and garlic powder.

Spread the beans into an even layer. Top with the mozzarella, Parmesan, tomato slices, green peppers, olives, the remaining ½ teaspoon oregano and crushed red pepper flakes.

Bake for 20 minutes, or until the sauce is bubbling and the cheese is melted.

Finish with fresh basil and serve warm with crusty bread.
